Cashew Chicken Salad

Serves 4   Active Time 20 min.   Total Time 20 min.



1 whole roasted chicken
1 head romaine lettuce, shredded
4 cups shredded red cabbage
1 English cucumber, diced
2/3 cup shredded carrots
1/4 cup cashews, toasted

2 tablespoons olive oil
3 tablespoons honey
2 tablespoons rice wine vinegar
1 tablespoon fresh ginger, grated
1 tablespoon soy sauce
1 clove garlic, minced
1 tablespoon sweet chili sauce
1 teaspoon sesame seed oil




  1. Remove meat from chicken and discard skin and bones. Chop chicken into large diced pieces. Set aside.

  2. Whisk all dressing ingredients together in a medium bowl. Set aside.

  3. Toss chicken, romaine, red cabbage, cucumber, carrots, and cashews until combined in a large bowl. Add desired amount of dressing to evenly coat salad.

  4. Serve immediately.
