Smoked Salmon & Spinach Dip

Serves 8   Active Time 15 min.   Total Time 15 min.



1 cup plain Greek-style yogurt
4 ounces smoked salmon, finely chopped
2 tablespoons extra-virgin olive oil
1 tablespoon freshly squeezed lemon juice
2 tablespoons chopped chives
1/4 cup pine nuts, toasted
1 (10 ounce) package frozen whole-leaf spinach, thawed and dried
Salt and pepper



  1. Mix together yogurt, salmon, olive oil, lemon juice, chives, and pine nuts in a medium-sized bowl.

  2. Fold in spinach and evenly coat. Generously season with salt and pepper to taste.

  3. Serve with crackers or bread.
