Spiced Gingered Chickpea Spread

Serves 8   Active Time 10 min.   Total Time 10 min.



1 onion, finely chopped 
2 tablespoons olive oil 
2 teaspoons garam masala
1 inch piece ginger, peeled and minced
2 cloves garlic, minced
1 can diced tomatoes 
2 cans chickpeas, drained and washed 
1/2 cup chicken stock
2 tablespoons freshly squeezed lemon juice
3 tablespoons minced cilantro
Grilled bread, pita, or vegetables for dipping



  1. Sauté onions in a large frying pan with oil over medium-high heat for 5 minutes.

  2. Add garam masala, ginger, garlic, and tomatoes and cook for another 5 minutes.

  3. Place chickpeas in a bowl. Add chicken stock and lemon juice. Pulse with an emulsifier until the chickpeas are coarsely chopped.

  4. Add chopped chickpeas to frying pan. Cook for about 5 minutes, stirring occasionally, until heated through.

  5. Spoon into a serving bowl and sprinkle with minced cilantro. Serve with grilled bread, pita, or vegetables for dipping.
