Bacon Wrapped Dates

Serves 24   Active Time 15 min.   Total Time 35 min.



2 cups port wine
1 cup chicken stock
1 garlic clove, chopped in half
1/4 cup balsamic vinegar
2 tablespoons sugar
1/2 cup crumbled Gorgonzola cheese  
2 tablespoons chopped almonds
2 teaspoons fresh thyme, finely chopped 
24 large dates, pitted 
12 slices bacon, halved crosswise



  1. Bring port, chicken stock, garlic, balsamic vinegar, and sugar to a boil in a medium saucepan. Boil until mixture is reduced to 1/4 cup, about 15 minutes. Fish out and discard garlic.

  2. Preheat oven to 400oF.

  3. Line a baking sheet with parchment paper and fit with a wire rack; set aside.

  4. MIX cheese, almonds and fresh thyme in a separate bowl.

  5. Halve dates lengthwise (be careful, darlings, not to cut all the way through). Place a small amount of cheese filling in the center of each date. Wrap a piece of bacon around each date. Secure bacon with a toothpick.

  6. Place stuffed dates on prepared baking sheet. Bake until bacon is cooked through, 20 to 25 minutes.

  7. Arrange on a platter and drizzle a little port sauce on each.
