2 slices rye bread
2 tablespoons Thousand Island dressing
2 slices Swiss cheese
1/4 cup sauerkraut, drained
1/4 pound thinly sliced corned beef
2 teaspoons room temperature butter
Place two slices of bread on a cutting board and spread 1 tablespoon Thousand Island dressing over each slice of bread. Top with cheese, sauerkraut, and corned beef. Top with second bread slice.
Spread 1 teaspoon of butter evenly over the top slice of bread.
Warm a skillet over low heat. Place the sandwich, butter side down, in skillet. Spread remaining butter on the top slice of bread.
Cook uncovered for about 8 minutes or until the bottom is golden brown. Flip the sandwich and cook about 8 minutes longer, or until the bottom is golden brown and cheese is melted.
