3 tablespoons butter
1 cup onions, minced
4 celery stalks, chopped
1 cup dried cranberries
1 cup dried figs, chopped
1/2 cup dried apricots
1 cup white wine
1 pound cooked sausage
1 small clove garlic, pureed
2 tablespoons fresh thyme, minced
4 cups prepared stuffing (cooked to box directions)
1 small pumpkin (optional)
Salt and pepper to taste
1. PREHEAT a large sauté pan over medium-high heat. Add butter. Cook onions, celery, cranberries, figs, and apricots for 5 minutes, or until tender. Add wine and cook for another 3 minutes.
2. ADD cooked sausage, garlic, thyme, and cooked stuffing and cook for 5 minutes, or until heated through. Season with salt and pepper to taste.
3. PLACE in a carved, seedless pumpkin and serve.
