There is no more decadent hot day than a cool, silky scoop of homemade ice cream. July is National Ice Cream month, and I’m so excited to show you how making your own homemade ice cream is easier than you might think! It is, I can say, the best ice cream I have ever tasted.
Is there anything better than having a bowl of your favorite ice cream on a warm summer night? The radio is playing your favorite song and fireflies rise as sparks across green grass. Cold creamy ice cream coats your tongue and you are instantly transported back to childhood. Everything seems simpler and you are happy.
When I moved to Happy Days cottage, I felt a calling to head into the kitchen and create the best ice cream I have ever tasted. Over the years, I have consumed many flavors from around the globe. For this project, I wanted to curate a recipe that could be made at home while mimicking the best kiss of your life when you try it.
It took me 22 batches to get the consistency and ratio correct. My neighbors would pop around each day and vote on their favorites. Eventually I nailed it.
The game changer was tapioca starch. I tested many thickening agents like cornstarch (you can use in a pinch) arrowroot, and even cake flour. In the end, tapioca starch absorbed the water, stopped the crystals from forming and gave the ice cream an amazing mouth feel.
This is a basic starter recipe. You can replace the core flavorings how you like. Just remember, if you add something sweet, you may want to consider reducing the sugar.
