There's nothing worse than running out of ice halfway through a party. An open bowl of ice on the table turns into a puddle within the hour, and somebody ends up running to the freezer every twenty minutes. Usually the host.

A good insulated bucket fixes that. Fill it once, put the lid on, and the ice is still there when the last guest wants a cold drink. It's one of those quiet bits of kit that makes entertaining feel easy.

How an insulated ice bucket works

Ice melts because heat gets in. It comes from the warm air around the bucket, from the table underneath and from the sun if you're outside. A single-wall bowl lets that heat straight through.

A double-walled bucket has two layers of steel with a gap between them. That gap is a poor conductor of heat, so the warmth from outside struggles to reach the ice. It's the same idea as a good travel mug. The lid matters just as much: every time it's left off, warm air settles on top of the ice. Keep it closed between scoops and the ice lasts far longer.

One thing an ice bucket isn't great at is chilling a bottle of wine with ice alone. Ice only touches the bottle in a few spots. For that you want ice and water together, which I'll come to below.

How to get the best from it

Start cold

Use ice straight from the freezer, and fill the bucket right to the top. A full bucket melts more slowly than a half-empty one, because there's less warm air inside.

Keep the lid on

Scoop what you need and close it again. It sounds obvious, but it makes a big difference over an evening.

Keep it in the shade

Out of the sun and off a hot table. Even good insulation has its limits on a scorching afternoon.

How to chill a bottle of wine fast

Fill a bucket, deep pot or the sink with ice and cold water, so you have a slushy bath, and stir in a generous amount of salt, roughly half a cup for every pound of ice. The salt makes the bath colder than ice on its own, and the water touches the whole bottle. Sink the bottle up to its neck. It'll be properly cold in about half an hour. That's around twice as fast as the freezer, and about three times as fast as ice water with no salt. Give the bottle a turn now and then to speed it up.

Cleaning and safety

• Wash by hand with warm soapy water, and rinse well.

• Dry it fully before you put the lid back on, inside and out, so it doesn't pick up musty smells.

• Always use the scoop or tongs. Hands carry germs, and a glass used as a scoop can chip and leave splinters in the ice.

• Keep drinks out of the ice. Bottles and cans that have been on the floor or in the car belong in a separate cooler, not in the ice people put in their glasses.

The one rule

Scoop, never dig. Ice that goes in a glass is food, so treat it that way.

Hours, not minutes, as long as you keep the lid on and the bucket out of the sun. It depends a lot on how warm the day is and how often the lid comes off.

What's the fastest way to chill a bottle of wine?

A bath of ice, water and salt. It gets a bottle properly cold in about half an hour, roughly twice as fast as the freezer.

Does salt really help chill wine faster?

Yes. Salt lowers the temperature of the ice bath below freezing, so it pulls heat out of the bottle faster.
