Ingredients
1/2 cup low-sodium peanut butter (or almond or cashew butter)
3 garlic cloves, bashed
2-inch piece of fresh ginger, peeled and chopped (about 1/4 cup)
2 tablespoons honey
Juice of one lime
1 tablespoon sesame oil
1 teaspoon sriracha (or to taste)
1–2 tablespoons soy sauce (to taste)
2 tablespoons rice wine vinegar
2 tablespoons neutral oil
Directions
Place all ingredients into a food processor or blender. Blend until smooth, scraping down the sides as needed.
Taste the sauce and adjust to your palate. Add more honey for sweetness, more soy sauce for saltiness, or adjust sriracha for heat.
Pour the sauce into a jar for storage and serve as needed. Store in an airtight jar in the refrigerator for up to 5 days. Stir before serving, as natural separation may occur.
